Smoky Tres Leches Chicken

Ingredients

  • 2 chicken breasts (or thighs for more flavor)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ tsp smoked paprika
  • ¼ tsp chili flakes (optional)
  • ½ cup roasted red peppers, sliced
  • ¼ cup dry sherry or white wine
  • 3 oz La Gruta Del Sol Tres Leches cheese, crumbled or sliced
  • 2 tbsp cream (or milk)
  • Fresh parsley, chopped
  • Salt and pepper to taste

Directions

  • Season chicken with salt, pepper, and smoked paprika. Heat olive oil in a skillet and sear the chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
  • In the same pan, add garlic and chili flakes; cook 30 seconds.
  • Add roasted peppers and sherry, scraping up the browned bits. Stir in cream and La Gruta Del Sol Tres Leches cheese. Let it melt into a silky, smoky sauce.
  • Return chicken to the pan, spoon sauce over it, and simmer 2–3 minutes.
  • Sprinkle with fresh parsley and a touch more smoked paprika before serving.
