Smoky Tres Leches Chicken

Ingredients
- 2 chicken breasts (or thighs for more flavor)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- ½ tsp smoked paprika
- ¼ tsp chili flakes (optional)
- ½ cup roasted red peppers, sliced
- ¼ cup dry sherry or white wine
- 3 oz La Gruta Del Sol Tres Leches cheese, crumbled or sliced
- 2 tbsp cream (or milk)
- Fresh parsley, chopped
- Salt and pepper to taste
Directions
- Season chicken with salt, pepper, and smoked paprika. Heat olive oil in a skillet and sear the chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, add garlic and chili flakes; cook 30 seconds.
- Add roasted peppers and sherry, scraping up the browned bits. Stir in cream and La Gruta Del Sol Tres Leches cheese. Let it melt into a silky, smoky sauce.
- Return chicken to the pan, spoon sauce over it, and simmer 2–3 minutes.
- Sprinkle with fresh parsley and a touch more smoked paprika before serving.
